Today I was a bit parched but didn’t want plain water. I really wanted something tasty and refreshing especially since it’s above 100 degrees right now – HOT! Anyway, I had watermelon and some mint in my fridge so I decided to whip up some watermelon-mint spritzers. YUM!!!! And very refreshing for a summer day.
Watermelon Mint Spritzer
1 C diced watermelon
1 fresh mint leaf {or two}
1 C sparkling water
Blend watermelon and mint in a high speed blender, then pour into the glass of choice {I always like to use wine glasses – that’s just me!}. Add sparkling water and top with a mint leaf. ENJOY!!!
What I love about watermelon is that they are mostly water — about 92 percent — but it’s super refreshing and filled with nutrients. There are lots of vitamins A, B6 and C, lycopene, antioxidants and amino acids. There’s even a modest amount of potassium. So drink up and enjoy!
