Potatoes & Meringue

Potatoe Meringue Blog

Ingredients
2 sweet potatoes
3 baking potatoes
1/4 cup maple syrup

Meringue
2 egg whites
4 Tbsp sugar

Instructions
1.  Preheat oven to 375 degrees.
2.  Peel and cut potatoes into large wedges.
3.  Cook on greased baking sheet for 20 minutes.
4.  Make Meringue, by mixing 2 egg whites until fluffy, slowly adding sugar 1 Tbsp at a time.
5.  After potatoes cook for about 20 minutes, check to see if done by poking with a knife, if done add maple syrup and meringue mixture {you can get fancy with the meringue by piping it on, but we just drop it on}.
6. Cook at 375 until meringues are brown at the tips {about 10 minutes}.
