We served this spicy pulled pork over Ezekiel English Muffins….yummers!
Spicy Ginger Pulled Pork
1 1/2 lbs pork loin {or any port cut you like}
2 pepper jalapeno {diced}
1 green bell pepper {diced}
1 pint cherry tomatoes {quartered}
1 onion {diced}
2 tbs tomato paste
1 tsp cumin
1/2 tsp allspice
2 tbsp Worcestershire Sauce
1 tbsp grated ginger
salt & pepper to taste
Instructions:
Step 1: Chop jalapenos, onion, green bell pepper, and cherry tomatoes. Add to crockpot and mix.
Step 2. Top with pork loin {or pork cut of choice}.
Step 3: Mix tomato paste, cumin, allspice, Worcestershire sauce, fresh grated ginger with @ 1/3 cup of water in a small bowl.
Step 4: Pour sauce over pork.
Step 5: Cook 7-8 hours on low or 4-5 hours on high in crockpot.
Step 6: Take two forks and pull apart pork {it will fall apart}.
Step 7: Serve as is or as sandwiches.
This recipe makes about six 1-cup servings.
