Cucumber Tuna Bites
1 Medium Cucumber
1/4 Cup Shelled Edamame {organic}
7 oz Can of Tuna
Optional: 2 Sheets of Annie Chun Wasabi Seaweed {or Sesame if you don’t like spicy}, but into 8 pieces
Optional: mayo to taste {add to calories}
Peel and slice cucumber into 8 rounds. Scoop seeds out of the middle, but not all the way through you so end up with a small cup. Combine tuna and edamame {and mayo if you choose to add}. Scoop tuna and edamame mixture into the cucumber bowls and top with a piece of wasabi seaweed for an added kick!
