Avocado Pudding
1 Large Ripe Avocado
1 Tbsp Coconut Oil
1/3 Cup Honey or Maple Syrup
1/4 Cup Cocoa Powder
1 tsp Vanilla
1/2 Cup Almond Milk to thin
Optional Toppings: coconut, almonds, strawberries, raspberries, pistachios – options are endless
Makes 4 servings
Add all ingredients, except milk to a Vitamix, blender or food processor. Blend until smooth adding milk as needed {we needed about 1/4 cup}. Spoon into bowls and chill before serving. Top with your favorite optional toppings, but be sure to add those to the calories! You will be surprised how amazing this is!!
