Quinoa Salad
3/4 Cup Dry Quinoa
1/2 Cucumber diced
1/4 Cup Dried Cranberries {or Cherries}
2 Small Green Onions chopped
1/2 Lemon {juice}
Cook quinoa as directed on package and let cool. Chop cucumbers and green onion. Once quinoa is cooled, mix all ingredients together with the juice of 1/2 a lemon. This recipe makes about 5 servings. Time saving tip: make this recipe as a side dish dinner and have a snack for the next day!
