30 Days of Snacks: Day 23 Nut Butter Protein Bars

Day 23 Protein PB Bars Blog

Nut Butter Protein Bar
1 Cup  Shaklee Instant Protein Soy Mix  
1 cup  Old-Fashioned Oats – uncooked
2 Tbsp Ground flaxseed (for variation use wheat germ)
1/3 cup Honey
1 Cup Peanut Butter or Almond Butter
2 1/2 tsp Vanilla
2/3 cup    Nuts, raisins, dried apricots, cranberries or chocolate chips

Combine oats, protein & fiber in large bowl.  Set aside. Bring honey to a boil on stovetop.  Remove from heat and stir in peanut butter and vanilla until smooth. Immediately add honey mixture to dry mixture until well incorporated.Stir/knead in dried fruit and press into an 8 X 8 square pan. Refrigerate 20 minutes or until firm.  If you want the quick version just mix all ingredients together without melting and refrigerate {this is what I do}.  You’ll need to get down and dirty like you do meatloaf and use your hands to mix all the ingredients.  We prefer the dried cranberries in ours, but the options are endless.  You could even top this with some dark chocolate for an added treat.

Cut into 12 bars or smaller bite-size squares and serve. Store bars in airtight container. {these are also freezable}. This recipe makes 15-20 servings, so even though you will want to eat the whole batch – don’t!!!  Each serving is about 212 calories so divy up the batch so you know when to stop.
