Mini Lettuce Shrimp Wraps
8 Boston Bib Leaves {or any small lettuce leaves}
1/2 Lb of cooked Shrimp {medium – chopped}
1 Green Onion Stalk {chopped}
Juice of 1/2 Lemon
Pepper to taste
1 tsp Mayo or Mustard {OPTIONAL, not used in this recipe}
Wash and peel off 8 leaves from the Boston head of lettuce. Chop shrimp into smaller bits. Wash and chop green onion stalk. Mix shrimp, green onion, pepper and mustard or mayo {optional} with the juice of 1/2 a lemon. Fill each lettuce leaf with a scoop of the shrimp mixture. Enjoy!! Makes 2-3 servings.
We didn’t use the mayo or mustard for the calories in this recipe, but my husband tried all three options and liked it. I personally had these without the mayo or mustard and they were amazing!
